Dancing Lantern, Souls Tainted By Darkness, Ghost Dog, Headless Knight and Animated Sword are not counting as 'Undead' for the 'Slaughter the Undead' LaPlace mission. (And probably for Holy enchant and Fated: Undead too, not proved, but a maybe.)

The bloody footprints on the pathway towards the pumpkin field appear as an overlayer, not ground tile.

Dancing Lantern is a plant. Souls and Ghost Dog are ghosts. Headless and Animated Sword are the dullahan and possessed races respectively. This isn't a bug.
